Ingredients
- 2 cups black beans, drained
- 2 cups corn, fresh or frozen
- 1 lime, juiced
- 5 tbsps olive oil
- 1/4 cup red onion, minced
- 1 1/2 tsps cumin
- 1/2 cup tomatoes, chopped
- salt, to taste
- black pepper, to taste
Directions
1. Mix together all ingredients - except tomatoes - in large bowl.
2. Salt and pepper to taste.
3. Cover and chill.
4. Shortly before serving, toss in the tomatoes.
Serve with a glass of Semi-Dry Riesling, Valvin Muscat, or Cayuga White.
